The VPN creates a secure encoded pipe between you and your server as seen in the picture below, the red line is your secure encoded pipe.

Now what is happening is the following: Your server and also your server IP is surfing the internet (Blue Line) and data is fed to your computer through the secure connection between you and your server. (Red Line)

This means NO One can see where you are surfing, the only information internet is seeing is your VPN server IP & VPN Servers Country location and thinks that the server is the real client but you are hidden behind the safty of your VPN Server & private IP and no logs are kept on your server at all.
